  • 1/2 teaspoon smoked paprika

  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 425°F (220°C). Wash and slice the potatoes into uniform 1/4-inch rounds.
  2. In a saucepan over low heat, combine melted butter, olive oil, and minced garlic; sauté until fragrant. Stir in heavy cream and whisk in Parmesan until smooth. Add thyme, smoked paprika, salt, and pepper; simmer for 2 minutes.
  3. Line a baking sheet with parchment paper. Layer three potato slices side-by-side on the sheet, spooning glaze between layers until you reach five layers high. Brush tops with remaining glaze.
  4. Roast for 25-30 minutes until golden and fork-tender, brushing stacks halfway through with remaining glaze.
