  • 4 cups vegetable broth
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chopped spinach or kale
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot over medium heat, warm olive oil. Add onion, carrots, and celery; sauté for 8–10 minutes until soft.
  2. Stir in minced garlic and tomato paste; cook for an additional 1–2 minutes.
  3. Add cannellini beans, vegetable broth, rosemary, thyme, salt, and pepper. Stir well and bring to a gentle boil.
  4. Reduce heat and let simmer uncovered for 20–25 minutes to meld flavors.
  5. In the last few minutes of cooking, add spinach or kale until wilted.
  6. Remove bay leaf and stir in lemon juice before serving.
