  • 1/2 cup diced cucumber
  • 1/4 cup finely chopped red onion
  • 1/4 cup sliced kalamata olives
  • 1/4 cup crumbled feta cheese (optional)
  • 8 small corn tortillas or soft taco shells
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a mixing bowl, combine olive oil, minced garlic, oregano, cumin, salt, and pepper to create a marinade.
  2. Add the chicken breasts to the marinade and coat well. Cover and refrigerate for at least 30 minutes.
  3. Heat a skillet over medium-high heat and cook the marinated chicken for about 6–7 minutes per side until cooked through. Let rest before slicing.
  4. Mix Greek yogurt with lemon juice in a bowl until smooth to create your sauce.
