  • 1 salmon fillet
  • 1 medium sweet potato
  • 1 cup broccoli florets
  • 1 tsp soy sauce
  • 1 tsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 tsp olive oil
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 tsp black sesame seeds (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato wedges with olive oil, paprika, salt, and pepper. Spread on a baking tray and roast for 25-30 minutes.
  3. Mix soy sauce, honey/maple syrup, sesame oil, and optional rice vinegar in a bowl. Place salmon on parchment-lined tray, brush with glaze, sprinkle with sesame seeds, and bake for about 12-15 minutes.
  4. Steam broccoli in a pot over boiling water for 4-5 minutes until bright green.
  5. Serve the salmon alongside sweet potato wedges and broccoli.
