  • ½ cup chopped onion
  • 5 cloves garlic (minced)
  • 1.5 cups cooked corn kernels
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 cup half-and-half
  • 4 oz feta cheese (crumbled)
  • Juice of 2 small limes
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Sauté chopped onion for 3–4 minutes until softened; add garlic and cook for an additional minute.
  3. Add shrimp, chili powder, smoked paprika, and salt. Cook until shrimp turns pink (approximately 3–4 minutes).
  4. Fold in cooked corn and pour in half-and-half; simmer gently for about 5 minutes.
  5. Stir in half of the crumbled feta until melted, then remove from heat.
  6. Squeeze fresh lime juice over the top and garnish with cilantro before serving.
