  • 1.5 cups cooked corn kernels
  • 1 cup half-and-half
  • 4 oz feta cheese (crumbled)
  • 2 tablespoons olive oil
  • 2 tablespoons salted butter
  • 1 teaspoon chili powder
  • ¼ teaspoon salt
  • 1 teaspoon smoked paprika
  • 2 small limes

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat. Add chopped onion; cook until translucent, then add minced garlic and sauté until fragrant.
  2. Stir in raw shrimp, chili powder, and salt. Cook until shrimp are pink (approximately 3-4 minutes), then remove from the pan.
  3. In the same skillet, combine cooked corn kernels with smoked paprika; stir well.
  4. Pour in half-and-half while stirring continuously, then add half of the crumbled feta.
  5. Return shrimp to the skillet; simmer for an additional 3-4 minutes until everything is heated through.
  6. Finish by squeezing fresh lime juice over the dish and garnishing with remaining feta.
