Ingredients
- 1 lb shrimp (peeled and deveined)
- 6–8 slices nitrate-free turkey bacon
- 3 large eggs
- 1 ripe avocado
- 3/4 cup cherry tomatoes (halved)
- 5 oz baby spinach or mixed greens
- 2 tbsp fresh lemon juice
- 1 tsp spicy brown mustard
- 3 cloves garlic (minced)
- 1/8 tsp sea salt
- 1/8 tsp black pepper
- 1/4 cup olive oil
- 1 tbsp organic coconut oil
Instructions
- Prepare the vinaigrette by whisking together lemon juice, spicy brown mustard, minced garlic, sea salt, black pepper, and olive oil in a bowl. Set aside.
- Cook the turkey bacon in a skillet over medium heat until crispy. Crumble and set aside.
- Preheat the grill or grill pan over medium-high heat. Brush shrimp with coconut oil; season with seafood seasoning. Grill for 2–3 minutes on each side until opaque.
- Soft boil the eggs: Boil for about 6–7 minutes; cool under cold water before peeling.
- Assemble the salad in a large bowl with baby spinach as the base. Top with grilled shrimp, crumbled turkey bacon, halved cherry tomatoes, sliced avocado, and soft-boiled eggs cut in half. Drizzle generously with the vinaigrette before serving.
