Ingredients
- 2 ½ – 3 lb boneless beef shoulder or Boston butt
- 1 small yellow onion
- 3 garlic cloves
- 1 ½ cups BBQ sauce
- ¼ cup apple cider vinegar
- 10–12 oz bag coleslaw mix
- Fresh lime juice
- Cooked rice
Instructions
- Place sliced onion at the bottom of the slow cooker.
- Add the beef on top of the onions and sprinkle minced garlic over it.
- Pour BBQ sauce and apple cider vinegar over the beef.
- Cover and cook on LOW for 8-10 hours until tender.
- Shred the beef in the slow cooker using forks or meat shredders.
- In a separate bowl, combine coleslaw mix, green onions, cilantro, lime juice, oil, vinegar, honey, cumin, salt, and optional spices; mix well and refrigerate.
- To serve, layer rice in bowls, top with slaw and shredded beef, and drizzle with extra BBQ sauce.
