- 1 pound baby potatoes (red or Yukon Gold)
- 4 tablespoons melted butter
- 1 ½ teaspoons minced garlic
- ½ teaspoon Italian seasoning
- ¼ cup finely grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Boil a pot of salted water and add baby potatoes; cook for 18-22 minutes until tender.
- Preheat your oven to 425°F and coat a baking sheet with cooking spray.
- Drain the potatoes, place them on the baking sheet, and gently smash each one.
- In a bowl, mix melted butter, minced garlic, Italian seasoning, salt, and pepper. Drizzle over smashed potatoes and sprinkle with Parmesan cheese.
- Roast in the preheated oven for 20-25 minutes until golden brown and crispy. Garnish with parsley before serving.
