  • 4 tablespoons melted butter
  • 1 ½ teaspoons minced garlic
  • ½ teaspoon Italian seasoning
  • ¼ cup finely grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Boil a pot of salted water and add baby potatoes; cook for 18-22 minutes until tender.
  2. Preheat your oven to 425°F and coat a baking sheet with cooking spray.
  3. Drain the potatoes, place them on the baking sheet, and gently smash each one.
  4. In a bowl, mix melted butter, minced garlic, Italian seasoning, salt, and pepper. Drizzle over smashed potatoes and sprinkle with Parmesan cheese.
  5. Roast in the preheated oven for 20-25 minutes until golden brown and crispy. Garnish with parsley before serving.
