- 10 ounces mini vegan marshmallows
- 6 cups crispy rice cereal
- ½ cup crushed graham crackers
- 1 cup mini vegan marshmallows (for filling)
- ½ cup chocolate spread or melted chocolate
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil or butter
- Nonstick spray or parchment paper
Instructions
- Melt 4 tablespoons of unsalted butter in a large saucepan over medium-low heat.
- Add 10 ounces of mini vegan marshmallows and stir until completely smooth.
- Remove from heat and fold in 6 cups of crispy rice cereal and ½ cup of crushed graham crackers until evenly combined.
- Transfer the mixture onto greased parchment paper and press it into a rectangle about ½-inch thick.
- Spread ½ cup of chocolate spread over the pressed mixture and sprinkle with 1 cup of mini vegan marshmallows.
- Carefully roll the mixture tightly from one long edge using parchment paper as a guide.
- Wrap the rolled log in parchment paper and refrigerate for 30–45 minutes until firm.
- Melt 1 cup of semi-sweet chocolate chips with 1 tablespoon of coconut oil; drizzle over the chilled log.
