  • 500g chicken breast, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp chili paste or sriracha
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 cups jasmine or basmati rice
  • 4 cups water
  • Pinch of salt

Instructions

  1. Cook the rice by rinsing it under cold water until clear. Combine rinsed rice, water, and salt in a pot. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until fluffy.
  2. Marinate the chicken in soy sauce and chili paste for about 10 minutes while the rice cooks.
  3. Heat vegetable oil in a wok over medium-high heat. Add garlic and onion; stir-fry for about 2 minutes until fragrant.
  4. Add marinated chicken to the wok; cook until golden brown (5-7 minutes).
  5. Toss in the sliced bell peppers; stir-fry for another 3-4 minutes until slightly tender but still crisp.
  6. Stir in any remaining marinade and adjust seasoning before serving hot over steamed rice.
