  • 2 tsp salt
  • 4 T olive oil (2 for brushing, 2 for marinade)
  • 2 tsp red apple vinegar
  • 2 tsp fresh lemon juice
  • 1 tsp garlic puree or minced garlic
  • 1 tsp Aleppo Pepper (adjust to taste)
  • Fresh parsley and mint for garnish

Instructions

  1. Wash the eggplant and cut it into uniform slices about 3/4 inch thick.
  2. Sprinkle salt over the slices and let them drain on paper towels for 40 minutes.
  3. In a bowl, whisk together olive oil, red apple vinegar, lemon juice, garlic puree, Aleppo Pepper, and optional spices.
  4. Preheat your grill to medium-high heat.
  5. Dry the eggplant slices thoroughly and brush both sides with olive oil.
  6. Grill the eggplant slices for about 4–5 minutes per side until charred.
  7. After grilling, place the eggplant in a baking dish and drizzle with the marinade; let it sit for 10–15 minutes to absorb flavors.
