- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 stalks celery (chopped)
- 1/4 cup finely chopped yellow onion
- 8 cloves garlic (minced)
- 2 tablespoons tomato paste
- 2 tablespoons roast beef base paste (like Better than Bouillon)
Instructions
- Season beef cubes with flour, salt, pepper, garlic powder, onion powder, and Italian seasoning.
- Heat vegetable oil in a Dutch oven over medium-high heat. Sear the seasoned beef until golden brown on all sides; then set aside.
- In the same pot, sauté chopped celery, onion, and garlic until softened. Stir in tomato paste and beef base; let simmer.
- Add beef stock and apple vinegar along with fresh herbs; bring to a gentle simmer and cover. Cook for about 2 hours.
- After 2 hours, add cubed potatoes and chopped carrots. Continue cooking for another 30 to 45 minutes until vegetables are tender.
