  • 2/3 cup apple vinegar
  • 4 large carrots (roughly chopped)
  • 3 medium Yukon gold potatoes (cut into cubes)
  • Fresh herbs (rosemary, thyme)
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 stalks celery (chopped)
  • 1/4 cup finely chopped yellow onion
  • 8 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons roast beef base paste (like Better than Bouillon)

Instructions

  1. Season beef cubes with flour, salt, pepper, garlic powder, onion powder, and Italian seasoning.
  2. Heat vegetable oil in a Dutch oven over medium-high heat. Sear the seasoned beef until golden brown on all sides; then set aside.
  3. In the same pot, sauté chopped celery, onion, and garlic until softened. Stir in tomato paste and beef base; let simmer.
  4. Add beef stock and apple vinegar along with fresh herbs; bring to a gentle simmer and cover. Cook for about 2 hours.
  5. After 2 hours, add cubed potatoes and chopped carrots. Continue cooking for another 30 to 45 minutes until vegetables are tender.
  6. Serve warm alongside rice or bread for a complete meal.
