  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 large eggs
  • ½ cup strawberry puree or jam
  • 1 ½ cups crushed graham crackers or golden Oreos
  • ¼ cup unsalted butter (for crust)
  • 1 cup crushed golden Oreos or vanilla wafers (for topping)
  • ½ cup freeze-dried strawberries

Instructions

  1. Preheat your oven to 325°F (163°C) and line a mini muffin tin with parchment paper.
  2. For the crust, mix crushed graham crackers or Oreos with melted butter and press into the bottom of the prepared pan.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in sour cream, vanilla extract, and strawberry puree until combined.
  4. Pour the cheesecake mixture over the crust and bake: for mini bites, bake for 20–25 minutes; for a larger pan, bake for 35–40 minutes until slightly jiggly in the center.
  5. Allow to cool to room temperature and refrigerate for at least four hours.
  6. For the topping, mix crushed Oreos (or vanilla wafers) with freeze-dried strawberries and melted butter; sprinkle this over each cheesecake bite before serving.
