  • 1 teaspoon vanilla (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together softened butter and powdered sugar until creamy. Add cornstarch, vanilla extract, salt, and flour; mix until just combined. Fold in diced strawberries gently.
  3. Roll tablespoon-sized portions into balls; coat each ball in sugar before placing on the baking sheet.
  4. Bake for 12–15 minutes or until lightly golden at the edges. Cool on a wire rack.
  5. For icing, mash diced strawberries with granulated sugar; mix in strawberry syrup, lemon juice, powdered sugar, and vanilla until smooth. Drizzle over cooled cookies.
