  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1½ cups all-purpose flour
  • ¾ cup milk
  • 1 teaspoon pure vanilla extract
  • 8 ounces softened cream cheese
  • ¼ to ½ cup powdered sugar
  • 8 ounces thawed Cool Whip
  • 1 pint fresh strawberries

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a greased and floured 9×13-inch baking dish.
  2. In a large bowl, cream together the softened butter and granulated sugar until smooth. Add eggs, baking powder, and salt; mix well.
  3. Gradually add flour and milk, alternating between the two until combined. Stir in vanilla extract.
  4. Pour batter into the prepared dish and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely.
  5. In another bowl, beat softened cream cheese with powdered sugar until smooth. Fold in thawed Cool Whip.
  6. Spread the cream cheese mixture over the cooled cake base and top with sliced strawberries.
  7. Refrigerate for at least three hours before serving.
