  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blackberries
  • 1/2 cup all-purpose flour (for streusel topping)
  • 1/4 cup brown sugar (for streusel topping)
  • 1/4 cup rolled oats (for streusel topping)
  • 1/2 teaspoon ground cinnamon (for streusel topping)
  • 1/4 cup unsalted butter, melted (for streusel topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this mixture to the wet ingredients until just combined. Gently fold in the blackberries.
  4. For the streusel topping, mix together flour, brown sugar, oats, and cinnamon in a separate bowl. Add melted butter and mix until crumbly.
  5. On a lined baking sheet, drop spoonfuls of cookie dough leaving space between each cookie. Sprinkle streusel topping generously over each cookie.
  6. Bake for 15-20 minutes or until golden brown around the edges. Allow cooling for about 10 minutes before transferring to a wire rack.
