  • 4 pieces of salmon (6 ounces each)
  • 3 cups baby spinach
  • 1/2 tsp paprika
  • 5.3 ounces feta cheese
  • 1/4 cup grated parmesan
  • 1/4 cup roasted red peppers
  • 2 Tbsp olive oil (divided)
  • 1 tsp Italian seasoning
  • A pinch of cayenne pepper
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice each salmon piece lengthwise without cutting through.
  3. Brush salmon with olive oil and season with salt and pepper.
  4. In a pan, heat remaining olive oil and sauté spinach with Italian seasoning, paprika, cayenne, salt, and pepper until wilted.
  5. Stir in chopped roasted red peppers, feta, and parmesan until combined.
  6. Stuff the mixture into each salmon piece evenly.
  7. Bake for 12-17 minutes until cooked through.
