- 3 cups baby spinach
- 1/2 tsp paprika
- 5.3 ounces feta cheese
- 1/4 cup grated parmesan
- 1/4 cup roasted red peppers
- 2 Tbsp olive oil (divided)
- 1 tsp Italian seasoning
- A pinch of cayenne pepper
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice each salmon piece lengthwise without cutting through.
- Brush salmon with olive oil and season with salt and pepper.
- In a pan, heat remaining olive oil and sauté spinach with Italian seasoning, paprika, cayenne, salt, and pepper until wilted.
- Stir in chopped roasted red peppers, feta, and parmesan until combined.
- Stuff the mixture into each salmon piece evenly.
- Bake for 12-17 minutes until cooked through.
