  • 2 tbsp vegetable oil
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce
  • 1/3 cup sugar
  • 2 tbsp pineapple juice
  • 1 cup pineapple chunks
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced

Instructions

  3. In another bowl, mix ketchup, rice vinegar, soy sauce, sugar, pineapple juice, and cornstarch-water mixture until well combined.
  4. Add diced bell peppers to the skillet with the cooked chicken. Pour the sauce over all ingredients and stir gently.
  5. Incorporate pineapple chunks into the skillet and cook for an additional 5 minutes until heated through.
  6. Serve hot over rice or noodles.
