- 2 large sweet potatoes (1.5 lbs), peeled and thinly sliced
- 4 cups kale, stems removed and chopped
- 1 cup heavy cream (240 ml)
- 3 cloves garlic, minced
- 1 cup Gruyère cheese, grated (100 g)
- 1/4 teaspoon ground nutmeg
- Salt and black pepper, to taste
- 1 tablespoon olive oil (for greasing the baking dish)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the sweet potatoes and set aside.
- Sauté the chopped kale in a skillet over medium heat until wilted, about 5–7 minutes.
- Grease a 9×13 inch baking dish with olive oil.
- Layer half of the sweet potato slices in the baking dish, followed by half of the sautéed kale, half of the cream, and half of the cheese. Season each layer with salt and pepper.
- Repeat the layers with the remaining ingredients.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 20–25 minutes until golden brown.
- Allow to cool for 10 minutes before serving.
