- 2 cups Cooked Chicken (or ground turkey, beef, or tofu)
- 1/2 cup Teriyaki Sauce
- 1 cup Pineapple Chunks
- 1 cup Cooked Rice (or quinoa/cauliflower rice)
- 1 cup Cheese (optional)
- Fresh Cilantro or Parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the bell peppers by slicing the tops off and removing the seeds.
- In a mixing bowl, combine cooked chicken, teriyaki sauce, pineapple chunks, cooked rice, and diced pepper tops if desired.
- Fill each pepper tightly with the mixture.
- Place them upright in a baking dish, cover with foil, and bake for about 30 minutes. If using cheese, uncover during the last five minutes to melt.
- Garnish with fresh cilantro or parsley before serving.
