  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 green onions, finely chopped
  • 1 tbsp red curry paste
  • 1 tsp soy sauce
  • 1 egg
  • 1 can (14 oz) coconut milk (full-fat)
  • Salt and pepper to taste
  • 1 tsp brown sugar or honey

Instructions

  1. In a mixing bowl, combine ground chicken, garlic, ginger, green onions, red curry paste, soy sauce, egg, salt, and pepper. Mix until well blended.
  2. Form the mixture into small meatballs (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
  3. Heat oil in a frying pan over medium heat. Cook the meatballs until golden brown on all sides (about 5-7 minutes).
  4. Remove meatballs and pour coconut milk into the same pan. Stir in brown sugar (or honey) and simmer until slightly thickened.
  5. Return the cooked meatballs to the pan and simmer for an additional 5 minutes to blend flavors.
  6. Serve over rice or noodles and garnish with fresh herbs if desired.
