  • 500 g 5% fat mince beef (ground beef)
  • 1 medium red onion (diced)
  • 4 cloves garlic (minced)
  • 3 stalks celery (diced)
  • 400 g tin chopped tomatoes
  • 2 tablespoons tomato purée
  • 400 g tin mixed beans in chilli sauce
  • 200 ml beef stock
  • 1 tablespoon dried thyme
  • 1 ½ teaspoon chilli powder
  • 2 teaspoons cumin
  • 1 tablespoon cocoa powder or 1 small square of dark chocolate
  • 1 tablespoon smoked paprika

Instructions

  1. If desired, brown the mince beef with onions and garlic in a skillet over medium heat for about 10 minutes until the meat is cooked through.
  2. Transfer the mixture to your slow cooker. Add diced celery, chopped tomatoes, tomato purée, mixed beans, beef stock, thyme, chilli powder, cumin, cocoa powder or dark chocolate square, and smoked paprika.
  3. Set the slow cooker to low for 8 hours or high for 5 hours to allow flavors to meld.
  4. Before serving, taste and adjust seasoning as needed.
