Ingredients
- 2 pounds mixed baby new potatoes
- 3 cloves garlic
- kosher salt
- 1/2 cup raw cashews, soaked in hot water for 30 minutes, then drained
- 1 tablespoon grainy dijon mustard
- 1/3 cup extra virgin olive oil
- 1 cup fresh basil, chopped
- 1/4 cup fresh dill, chopped
- 2 chives, chopped
- flaky sea salt and black pepper
- 1 pinch crushed red pepper flakes
- juice of 1 lemon
Instructions
- 1. Place the potatoes, garlic cloves, and a tablespoon of kosher salt in a large pot. Fill with water.
- 2. Bring to a boil over high heat, then reduce to medium heat. Simmer for 10–15 minutes until fork-tender.
- 3. Drain the potatoes and return them to the hot pot. Remove the garlic cloves.
- 4. Cover the pot to allow the potatoes to steam for another 20 minutes.
- 5. In a food processor, combine cooked garlic (from step 1), drained cashews, dijon mustard, and olive oil.
- 6. Pulse until smooth and creamy; add water if necessary to thin slightly.
- 7. Cut the cooked potatoes in half and transfer them to a large serving bowl.
- 8. Add in the cashew sauce, chopped basil, dill, chives, lemon juice, along with a pinch each of flaky sea salt, black pepper, and crushed red pepper flakes.
- 9. Toss everything well to combine. Taste and adjust seasoning as needed.
