Ingredients
- 190g graham cracker crumbs
- 35g sugar
- 75g melted unsalted butter
- 32 oz full-fat cream cheese
- 325g granulated sugar
- ½ tsp salt
- 1 tsp vanilla essence
- 4 large eggs
- 120g heavy cream
- 240g sour cream
- 1 tbsp cornstarch
- Juice of 2 lemons (1 tbsp for filling, juice of 1 lemon for topping)
- 1 lb strawberries
Instructions
- Preheat the oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl; mix well and press into the bottom of a springform pan. Bake for 10 minutes and let cool.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add granulated sugar, salt, and vanilla essence while mixing. Add eggs one at a time until just blended. Stir in heavy cream, sour cream, cornstarch, and lemon juice until smooth.
- Pour the cheesecake filling over the cooled crust and bake for about 60-75 minutes until set but slightly jiggly in the center. Turn off the oven and let cool inside for an hour.
- For the topping, cook chopped strawberries with sugar, cornstarch, and lemon juice in a saucepan until softened (5-7 minutes).
- Once cooled completely at room temperature, refrigerate for at least four hours or overnight before serving with the strawberry mixture on top.
