  • 190g graham cracker crumbs
  • 35g sugar
  • 75g melted unsalted butter
  • 32 oz full-fat cream cheese
  • 325g granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs
  • 120g heavy cream
  • 240g sour cream
  • 1 tbsp cornstarch
  • Juice of 2 lemons (1 tbsp for filling, juice of 1 lemon for topping)
  • 1 lb strawberries

Instructions

  1. Preheat the oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl; mix well and press into the bottom of a springform pan. Bake for 10 minutes and let cool.
  2. In a large mixing bowl, beat the cream cheese until smooth. Gradually add granulated sugar, salt, and vanilla essence while mixing. Add eggs one at a time until just blended. Stir in heavy cream, sour cream, cornstarch, and lemon juice until smooth.
  3. Pour the cheesecake filling over the cooled crust and bake for about 60-75 minutes until set but slightly jiggly in the center. Turn off the oven and let cool inside for an hour.
  4. For the topping, cook chopped strawberries with sugar, cornstarch, and lemon juice in a saucepan until softened (5-7 minutes).
  5. Once cooled completely at room temperature, refrigerate for at least four hours or overnight before serving with the strawberry mixture on top.
