  • 1 Italian style loaf
  • 1 1/2 sticks of unsalted butter
  • 2 tablespoons minced garlic (or garlic paste)
  • 2 tablespoons of chopped parsley
  • 1 teaspoon of crushed red pepper flakes
  • 1/4 cup of shredded parmesan cheese
  • 1/2 cup of shredded mozzarella cheese
  • 1/2 cup heavy cream

Instructions

  1. Cut the chicken breasts into ½ inch pieces.
  2. Transfer them to a bowl, drizzle with 1 tablespoon of olive oil, and season with 1 tablespoon of poultry seasoning, or a mix of salt, pepper, and garlic powder.
  3. In a pan over medium heat, cook the chicken until golden.
  4. Slice your Italian style loaf lengthwise in half.
  5. In a small bowl, combine 1 stick of melted butter, 1 tablespoon of minced garlic, 1 tablespoon of chopped parsley, and 1 teaspoon of crushed red pepper flakes.
  6. Spread this mixture evenly on both halves of the bread.
  7. Toast the bread in a preheated 350°F oven for 5-10 minutes, checking after 5 minutes until it reaches your desired level of toasting.
  8. Using the same pan from step one (no need to wash), heat it over medium-low heat.
  9. Add ½ stick of butter and let it melt.
  10. Stir in 1 tablespoon of minced garlic and cook for 2-3 minutes until fragrant.
  11. Lower heat to low and add heavy cream (½ cup) along with parmesan cheese (¼ cup) and chopped parsley (1 tablespoon).
  12. Simmer on low heat while stirring continuously until slightly thickened (about 3-5 minutes). Remove from heat.
  13. Spread half of the prepared sauce over the toasted bread.
  14. Top with chopped chicken pieces, shredded mozzarella cheese (½ cup), and remaining sauce.
  15. Return to oven at 350°F for another 5 minutes or until cheese is fully melted.
  16. Slice your delicious creation into 2-3 inch pieces and serve warm.
