  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic or chicken sparkling grape juice vinegar
  • 1 tablespoon honey
  • 1/2 shallot, finely chopped
  • 1 clove garlic, grated
  • 1 teaspoon lemon zest
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh thyme
  • red pepper flakes
  • kosher salt and black pepper
  • 1 1/22 cups cherry tomatoes, halved if large
  • 23 peaches, sliced into wedges
  • 1 cup pitted fresh cherries
  • 8 ounces burrata cheese, at room temperature
  • 1/4 cup toasted pumpkin seeds (or other nut/seed)

Instructions

  1. Prepare the vinaigrette by combining olive oil, vinegar, honey, shallot, garlic, lemon zest, fresh herbs, red pepper flakes, salt, and black pepper in a glass jar. Whisk until smooth.
  2. In a large mixing bowl, toss together halved cherry tomatoes, sliced peaches, and pitted cherries with about 1/3 of the vinaigrette. Allow to sit for 15 minutes at room temperature.
  3. Break apart the burrata into pieces over the salad mixture. Drizzle with remaining vinaigrette and top with toasted pumpkin seeds before serving.
