This refreshing dish combines juicy peaches and ripe tomatoes, topped with creamy burrata cheese for a delightful contrast.   • 1 1/22 cups cherry tomatoes, halved if large
  • 23 peaches, sliced into wedges
  • 1 cup pitted fresh cherries
  • 8 ounces burrata cheese, at room temperature
  • 1/4 cup toasted pumpkin seeds
  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar or chicken sparkling grape juice vinegar
  • 1 tablespoon honey
  • 1/2 shallot, finely chopped
  • 1 clove garlic, grated
  • 1 teaspoon lemon zest
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh thyme
  • Red pepper flakes, to taste
  • Kosher salt and black pepper, to taste

Instructions

  1. In a glass jar, combine olive oil, vinegar, honey, shallot, garlic, lemon zest, fresh herbs, red pepper flakes, salt, and pepper to create the vinaigrette. Shake until smooth.
  2. In a large mixing bowl, toss together halved cherry tomatoes, sliced peaches, and cherries with one-third of the vinaigrette. Allow to rest for 15 minutes.
  3. To serve, break apart burrata over the salad mixture and drizzle with remaining vinaigrette. Top with pumpkin seeds and additional herbs if desired.
