  • 8 ounces pasta (rotini, fusilli, or penne)
  • 2 medium zucchinis (sliced into rounds)
  • 2 cups cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • 3 tablespoons olive oil
  • ¼ cup fresh basil (chopped)
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve ½ cup of cooking water before draining.
  2. In a skillet, heat 2 tablespoons olive oil over medium heat. Sauté zucchini for 3-4 minutes until golden; remove from skillet.
  3. Add remaining oil to the skillet; sauté garlic for 30 seconds before adding cherry tomatoes and a pinch of salt. Cook for 5-7 minutes until softened.
  4. Return zucchini to the skillet, add cooked pasta, and toss together, using reserved pasta water if needed.
  5. Stir in chopped basil, season with salt, pepper, and red pepper flakes if desired.
  6. Serve warm, garnished with optional grated cheese.
