  • 1 heaping cup of fresh diced mangoes
  • 1 ½ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter (melted and cooled)
  • 1 cup granulated sugar
  • 1 large egg (or ¼ cup unsweetened applesauce)
  • ¼ cup coconut-flavored yogurt
  • ½ cup milk
  • 1 tsp vanilla extract
  • ¾ cup unsalted butter (room temperature)
  • ½ cup mango reduction
  • ¼ tsp salt
  • ½ tsp vanilla extract
  • 4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.
  2. In one bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, mix melted butter and sugar until smooth. Add the egg (or applesauce), yogurt, milk, and vanilla; blend until creamy.
  4. Gradually combine wet and dry ingredients until just mixed. Fold in diced mangoes.
  5. Fill each liner two-thirds full with batter and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Cool on a rack before frosting with mango buttercream.
