  • 1 heaping cup of fresh diced mangoes
  • 1&1/2 cups (190g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (114g) unsalted butter (melted and cooled)
  • 1 cup (200g) granulated sugar
  • 1 large egg (or 1/4 cup of unsweetened applesauce)
  • 1/4 cup (60ml) coconut flavored yogurt
  • 1/2 cup (120ml) milk
  • 1 tsp vanilla
  • 3/4 cup (170g) unsalted butter (room temperature)
  • 1/2 cup (120ml) mango reduction
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 4 cups (500g) powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, combine melted butter, sugar, egg or applesauce, yogurt, milk, and vanilla until smooth.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined; fold in the diced mangoes.
  5. Fill each cupcake liner two-thirds full with batter and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Cool cupcakes before frosting with prepared mango buttercream.
