  • 3 ribs celery (diced)
  • 2 large carrots (sliced)
  • 4 cups chicken broth
  • 2 cans Great Northern beans (drained and rinsed)
  • 2 cups fresh baby spinach
  • ½ cup heavy cream
  • Parsley (for garnish)

Instructions

  1. In a large Dutch oven over medium-high heat, brown the chicken sausage for about 10–15 minutes, breaking it up as it cooks.
  2. Reduce the heat to medium and add the diced onions, celery, and carrots; cook until softened, about 3–5 minutes. Stir in minced garlic and cook for an additional minute.
  3. Mix in tomato paste, Italian seasoning, crushed red pepper, and black pepper; stir well.
  4. Pour in chicken broth and add rinsed beans; bring to a simmer and cook for 6–7 minutes until vegetables are tender.
  5. Stir in heavy cream and spinach; cook until spinach wilts down (about 5 minutes).
  6. Serve warm in bowls garnished with chopped parsley.
