  • 2 tablespoons olive oil
  • 1 cup cooked chicken, shredded
  • 1/2 cup Greek yogurt or plant-based yogurt
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: 1/2 cup shredded cheese
  • Chopped green onions for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash sweet potatoes, prick with a fork, drizzle with olive oil, and bake for 45-60 minutes until tender.
  3. Let cool slightly, slice in half lengthwise, and scoop out the flesh into a mixing bowl.
