Ingredients
- 1 lb ground turkey
- 2/3 cup italian breadcrumbs
- 3/4 cup onion (finely diced)
- 1 egg
- 2 tsp garlic (freshly minced)
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 tsp dried oregano
- 3.5 cups cooked brown rice
- 4 cups cucumbers (sliced into half-moons)
- 2 cups kalamata olives
- 1.25 cup tzatziki sauce
- fresh dill
- 1 lemon (cut into wedges)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine ground turkey, breadcrumbs, diced onion, egg, minced garlic, salt, pepper, and oregano until just mixed.
- Form small meatballs (1 inch in diameter) and place them on a parchment-lined baking sheet.
- Bake for 15 minutes or until golden brown and cooked through.
- While meatballs bake, cook brown rice as per package instructions and slice cucumbers.
- Assemble the bowls: start with brown rice at the bottom, layer in cooked meatballs, cucumbers, kalamata olives, and dollops of tzatziki sauce. Garnish with fresh dill and serve with lemon wedges.
