Instructions

- In one bowl, mix flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk together sugar, oil, eggs, vanilla extract, lemon juice, and lemon zest.
- Combine wet and dry ingredients until just mixed; fold in grated zucchini.
- Pour into the prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
- Cool for 10 minutes before transferring to a wire rack.
- For the glaze, whisk powdered sugar with lemon juice until smooth and drizzle over cooled bread.
