  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts

Instructions

  1. Preheat your oven to 400°F (200°C) and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt; set aside.
  3. In a stand mixer or using a hand mixer, cream cold butter with light brown sugar and granulated sugar until creamy. Add egg and vanilla extract; mix until combined.
  4. Gradually incorporate chopped chocolate, 1 cup of chocolate chips, walnuts, and dry ingredients until just mixed.
  5. Scoop dough into equal balls using a large cookie scoop and place on prepared sheets. Add remaining chocolate chips on top.
  6. Bake for 12 to 13 minutes until edges are golden brown. Let cool for about 5 minutes before transferring to wire racks.
