  • 1 flax egg (1 Tablespoon ground flaxseed mixed with 3 Tablespoons water)
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1 1/2 cups + 1 Tablespoon all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare the apple filling: In a saucepan, mix water and cornstarch over medium heat until smooth. Stir in chopped apples, brown sugar, vegan butter, lemon juice, and pumpkin pie spice. Cook for about 5 minutes until apples soften slightly. Remove from heat and let cool.
  2. Make the cookie dough: Cream together vegan butter, sugars, flax egg, and vanilla bean paste in a mixing bowl until smooth. Gradually add flour, pumpkin pie spice, baking powder, and salt until just combined.
  3. Assemble the cookies: Preheat your oven to 350°F (175°C). Scoop a spoonful of dough, flatten it, place apple filling in the center, and fold the dough around it to form a ball.
  4. Bake: Place on a lined baking sheet with space between each cookie. Bake for 25-30 minutes until golden brown. Allow cooling on a wire rack before serving.
