  • 2 cups gluten-free all-purpose flour
  • 1 cup vegan butter
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 cup coconut cream
  • 1/2 cup soaked cashews
  • 1/2 cup lemon juice
  • 2 teaspoons lemon zest
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/3 cup cornstarch
  • pinch of salt
  • pinch of turmeric (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a square baking pan lined with parchment paper.
  2. In a large bowl, mix together gluten-free flour, vegan butter, maple syrup, vanilla extract, and salt until well combined.
  3. Press the mixture into the prepared baking pan to form an even crust and bake for 15-20 minutes until golden brown.
  4. Allow the crust to cool before poking holes in it with a fork.
  5. In a blender, combine coconut cream, soaked cashews, lemon juice and zest, maple syrup, granulated sugar, vanilla extract, cornstarch, salt, and turmeric (if using). Blend until smooth.
  6. Transfer the filling into a saucepan over medium heat and stir continuously for about 4-6 minutes until thickened.
  7. Pour the filling over the cooled crust and level it out with a spatula.
  8. Refrigerate for at least 4-6 hours or overnight before slicing into bars.
