- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons cornstarch (for coating the tofu)
- 2 tablespoons soy sauce or tamari
- 2 tablespoons rice vinegar
- 1 tablespoon maple syrup
- 2 tablespoons neutral oil for cooking
- Green onions and sesame seeds for garnish
Instructions
- Press the tofu between kitchen towels for 15 minutes to remove excess moisture.
- Cut the pressed tofu into 1-inch cubes and coat each piece with cornstarch.
- Heat oil in a large skillet over medium-high heat, add tofu in a single layer, and cook until golden brown (about 3-4 minutes per side).
- Remove tofu and sauté sliced bell peppers and onion until caramelized (about 5 minutes).
- Add minced garlic and ginger; stir for 30 seconds until fragrant.
- Toss in pineapple chunks and cook for another 2-3 minutes until caramelized.
- Mix soy sauce, rice vinegar, and maple syrup in a bowl; pour over the vegetable mixture.
- Return crispy tofu to the skillet; gently stir for about 2 minutes until everything is well combined.
