  • 4 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 4 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • 1 tablespoon vegetable oil
  • 1 tablespoon honey
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder (adjust to taste)
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. In a mixing bowl, combine fish sauce, soy sauce, brown sugar, minced garlic, grated ginger, vegetable oil, honey, black pepper, and chili powder. Stir until the sugar dissolves.
  2. Add chicken thighs and ensure they are fully coated in the marinade. Cover and refrigerate for at least one hour or overnight.
  3. Preheat the grill to medium-high heat (400°F / 200°C).
  4. Remove the chicken from the marinade and let excess drip off before grilling.
  5. Grill each side for 5-7 minutes or until the internal temperature reaches 165°F (75°C). Use a meat thermometer for accuracy.
