Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 2 lb)
  • 2 cups low-sodium chicken broth
  • 1 can white kidney beans (19 oz), drained and rinsed
  • 1 can sweet corn (12 oz), drained
  • 1 can green chiles (4 oz)
  • 4 ounces cream cheese (room temperature)
  • 1 teaspoon green hot sauce
  • 1 teaspoon chili powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 1 tablespoon cornstarch (optional)
  • 1 tablespoon water (optional)

Instructions

  1. In a Dutch oven or large pot, combine chicken and broth; simmer over medium-high heat. Reduce heat to medium-low and cover for about 15 minutes until the chicken reaches 165°F.
  2. Remove the chicken and shred it using two forks before returning it to the pot.
  3. Stir in beans, corn, green chiles, hot sauce, chili powder, onion powder, and salt—mix thoroughly.
  4. Cut cream cheese into cubes and stir into the pot until fully melted; simmer for another 10 minutes.
  5. For a thicker chili, mix cornstarch with water in a small bowl and add it to the pot; stir until desired thickness is achieved.
  6. Serve hot with your favorite toppings like avocado slices or tortilla chips.
