Instructions

  1. Prepare the zucchini by squeezing out excess moisture using a cheesecloth or kitchen towel. Place the dry zucchini in a mixing bowl.
  2. Add egg, Parmesan, cornstarch, salt, and pepper to the bowl and mix until you achieve a dough-like consistency.
  3. Heat garlic butter in a non-stick skillet over medium heat. Form two patties from the zucchini mixture and cook each for 3–4 minutes per side until golden brown.
  4. Assemble your sandwich by placing shredded cheddar on one patty, topping it with the second patty. Cook for an additional 3 minutes until the cheese melts.
