  • 4 medium zucchinis
  • 1 lb lean ground turkey
  • 1 cup low-carb marinara sauce
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 large eggs
  • Olive oil
  • 2 cloves garlic (minced)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips, sprinkle with salt, and let sit for 10-15 minutes before patting dry.
  3. In a skillet, heat olive oil over medium heat and cook the ground turkey until browned. Add minced garlic and seasonings; stir in marinara sauce and simmer for 5 minutes.
  4. In a mixing bowl, combine ricotta cheese, mozzarella cheese (reserve some for topping), Parmesan cheese, eggs, and remaining herbs.
  5. In a baking dish, layer meat sauce at the bottom followed by zucchini slices. Spread half of the cheese mixture over zucchinis. Repeat layers twice more ending with meat sauce on top.
  6. Sprinkle remaining mozzarella on top and cover with foil. Bake for 30 minutes; remove foil and bake for another 15 minutes until golden brown.
