  • 4 medium zucchinis (sliced lengthwise into 1/8-inch thick strips)
  • 1 lb (450g) lean ground turkey
  • 1 cup (240ml) low-carb marinara sauce
  • 2 cloves garlic (minced)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 15 oz (425g) ricotta cheese
  • 2 cups (200g) shredded mozzarella cheese
  • 1/2 cup (50g) grated Parmesan cheese
  • 2 large eggs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips; sprinkle with salt and let sit for 10-15 minutes to remove moisture. Pat dry.
  3. In a large skillet, heat olive oil over medium heat; add ground turkey, cooking until browned. Stir in garlic, basil, oregano, salt, pepper, and marinara sauce; simmer for 5 minutes.
  4. In a mixing bowl, combine ricotta cheese, mozzarella cheese (reserve some), Parmesan cheese, eggs, and remaining herbs until well mixed.
  5. In a baking dish, layer meat sauce, zucchini strips, cheese mixture three times, finishing with meat sauce on top and reserved mozzarella.
  6. Cover with foil and bake for 30 minutes; uncover and bake for an additional 15 minutes until golden brown.
  7. Let stand for 10-15 minutes before slicing.
