  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • Pinch of black pepper
  • 12 oz chicken sausage

Instructions

  1. Preheat your air fryer to 390°F.
  2. In a large bowl, combine chopped red bell pepper, orange bell pepper, red onion, and zucchini. Drizzle with avocado oil and toss to coat.
  3. In a small bowl, mix garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Add to veggies and toss well.
  4. Slice chicken sausage into rounds and add to the vegetable mixture; toss everything together.
