  • 1 1/2 cups fresh blackberries
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon lemon zest (optional)
  • Purple food coloring (optional)
  • 1 cup unsalted butter, room temperature (for frosting)
  • 3 1/2 cups powdered sugar
  • 1 cup fresh blackberries (reduced to 1/3 cup puree) for frosting
  • 4 ounces cream cheese, room temperature
  • 1 teaspoon pure vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then mix in buttermilk and vanilla.
  3. In another bowl, whisk together flour, baking powder, baking soda, lemon zest (if using), and salt. Gradually combine dry ingredients into wet ingredients and fold in blackberries.
  4. Divide the batter into prepared pans and bake for 30-32 minutes or until a toothpick comes out clean. Cool cakes on racks.
  5. For the frosting, beat cream cheese and butter until smooth; gradually add powdered sugar along with blackberry puree and vanilla extract.
  6. Once cooled, layer the cakes with frosting in between and around the edges.
