  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1/2 teaspoon ground cinnamon
  • 1 1/3 cups grated carrot
  • 2 (8 ounce) packages cream cheese
  • 1/2 cup granulated sugar
  • 2 teaspoons all-purpose flour
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 4 tablespoons melted unsalted butter
  • 1 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9-inch square baking pan with parchment paper.
  2. In a mixing bowl, whisk together melted butter, brown sugar, eggs, and vanilla until smooth. Gradually add flour, baking powder, baking soda, salt, and cinnamon; mix until combined. Stir in grated carrots.
  3. In another bowl, beat cream cheese with granulated sugar and flour until smooth. Add eggs one at a time followed by vanilla; mix until fully incorporated.
  4. Spread two-thirds of the carrot cake batter into the prepared pan. Pour over two-thirds of the cheesecake batter, then dollop remaining carrot batter on top and drizzle with remaining cheesecake batter.
  5. Bake for 45-55 minutes or until slightly firm in the center. Cool in the pan before refrigerating for at least three hours.
  6. While cooling, whisk together melted butter, powdered sugar, and vanilla for icing consistency; drizzle over chilled bars before slicing.
