- 4 tablespoons melted unsalted butter
- 1 1/4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Line a 9-inch square baking pan with parchment paper.
- In a mixing bowl, whisk together melted butter, brown sugar, eggs, and vanilla until smooth. Gradually add flour, baking powder, baking soda, salt, and cinnamon; mix until combined. Stir in grated carrots.
- In another bowl, beat cream cheese with granulated sugar and flour until smooth. Add eggs one at a time followed by vanilla; mix until fully incorporated.
- Spread two-thirds of the carrot cake batter into the prepared pan. Pour over two-thirds of the cheesecake batter, then dollop remaining carrot batter on top and drizzle with remaining cheesecake batter.
- Bake for 45-55 minutes or until slightly firm in the center. Cool in the pan before refrigerating for at least three hours.
- While cooling, whisk together melted butter, powdered sugar, and vanilla for icing consistency; drizzle over chilled bars before slicing.
