Ingredients
- 6 oz Cream cheese (room temperature)
- 3 TBSP White granulated sugar
- 1 tsp Pure vanilla extract
- 3 cups All-purpose flour
- 1 tsp Baking soda
- 1 tsp Salt
- 2 tsp Ground cinnamon
- 1/4 tsp Ground nutmeg
- 1 cup Unsalted butter (melted and cooled)
- 1 cup Brown sugar (packed light or dark)
- 1/2 cup White granulated sugar
- 1 cup Finely grated carrots (Make sure to grate them fresh. Don't use pre-shredded)
- 2 Large egg yolks (room temperature)
- 2 oz Cream cheese (room temperature)
- 2 TBSP Unsalted butter (room temperature)
- 3/4 cup Powdered sugar (sifted)
- 1 tsp Pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- For the cream cheese filling, mix softened cream cheese, unsalted butter, powdered sugar, and vanilla extract until smooth; set aside.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. In another bowl, beat melted butter with both sugars until combined. Add egg yolks and vanilla; mix well.
- Gradually incorporate dry ingredients into wet mixture, then gently fold in freshly grated carrots.
- Scoop dough into balls, flatten slightly, add cream cheese filling in the center, and seal by rolling back into balls.
