  • 6 oz Cream cheese (room temperature)
  • 3 TBSP White granulated sugar
  • 1 tsp Pure vanilla extract
  • 3 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1 cup Unsalted butter (melted and cooled)
  • 1 cup Brown sugar (packed light or dark)
  • 1/2 cup White granulated sugar
  • 1 cup Finely grated carrots (Make sure to grate them fresh. Don't use pre-shredded)
  • 2 Large egg yolks (room temperature)
  • 2 oz Cream cheese (room temperature)
  • 2 TBSP Unsalted butter (room temperature)
  • 3/4 cup Powdered sugar (sifted)
  • 1 tsp Pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. For the cream cheese filling, mix softened cream cheese, unsalted butter, powdered sugar, and vanilla extract until smooth; set aside.
  3. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. In another bowl, beat melted butter with both sugars until combined. Add egg yolks and vanilla; mix well.
  4. Gradually incorporate dry ingredients into wet mixture, then gently fold in freshly grated carrots.
  5. Scoop dough into balls, flatten slightly, add cream cheese filling in the center, and seal by rolling back into balls.
  6. Bake for 12-15 minutes until golden around edges but soft in center. Cool before serving.
