  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme or oregano
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup cheddar cheese (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Remove the leaves from the cauliflower and slice it into thick 'steaks' about ¾ inch thick.
  3. In a mixing bowl, combine olive oil, garlic powder, smoked paprika, thyme or oregano, salt, and black pepper.
  4. Brush both sides of each cauliflower steak with the seasoning mixture.
  5. Place the steaks on a baking sheet lined with parchment paper and roast for about 25 minutes until golden brown and tender.
  6. Sprinkle mozzarella, Parmesan, and cheddar cheese over each steak and return to the oven for an additional 5–7 minutes until melted and bubbly.
  7. Garnish with chopped parsley before serving.
