  • 1/4 sliced red onion
  • 1/4 cup chopped pecans
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup sunflower seeds
  • 8 ounces chopped turkey
  • 1 tablespoon unsweetened dried cranberries
  • 1 cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons allulose or another granulated sweetener
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt

Instructions

  1. Rinse and chop the broccoli into bite-sized pieces and thinly slice the red onion.
  2. In a skillet over medium heat, cook the chopped turkey until crispy. Let it cool on paper towels.
  3. In a mixing bowl, whisk together Greek yogurt, apple cider vinegar, allulose, Dijon mustard, and salt until smooth.
  4. In a large bowl, combine the broccoli, red onion, pecans, cheddar cheese, sunflower seeds, turkey bits, and dried cranberries. Pour the dressing over the top.
  5. Gently toss all ingredients until well coated.
  6. For best flavor, chill in the refrigerator for about 30 minutes before serving.
